The Herb Garden is a success! What joy we (the guests and I) had this past year harvesting, eating and purely breathing in the scent of the fresh plants. Many of the cutting flowers that we planted turned out to be edible and medicinal.... who knew?
The rosemary, oregano and thyme are alive and still available for use in the kitchen - another surprise that nature has given us.
Guests were able to snip many of the herbs and take them away to use in their own homes. Stevia was a big hit, along with the lemon verbena for tea.
2008 should bring a larger variety and a more abundant harvest than last year. We hope to be harvesting all season and dehydrating the herbs - freezing the standard favorite of fresh basil - to use all throughout the winter months. It is a delicious addition to many of our breakfast meals.
